I can certainly replicate the issue, but this may be expected behaviour given that the in-built remote desktop functionality on Ubuntu desktop is provided by Gnome Remote Desktop, and that's largely intended for "remote support" purposes (i.e. control of a logged-in session) rather than full "headless" operation (covering gdm etc). In other words, it's not setting up a virtual desktop for RDP to talk to, but mirroring a physical one, and if the physical one's geometry changes (which is reasonable to expect upon removal / addition of a monitor) the RDP server may (reasonably) choose to close the connection in response.
Or is this another RDP setup which isn't using Gnome Remote Desktop? If it's something definitely intended for full headless operation, it may be worth filing a bug.
