BookStack? Not as clean as notes but very handy or documentation etc. https://www.bookstackapp.com
AnyType is neat and worth supporting but can be a bit 'group' orientated https://anytype.io
I would have said Trilium but its looking for new support https://github.com/zadam/trilium/issues/4620
Main issue can be your portable devices - Apple clients can be rare as some developers do not want to pay the Apple dev fees (or may not have any kit to test on).
The Reddit r/selfhosted/ has lots of options e.g. https://www.reddit.com/r/selfhosted/com ... aking_app/
I ended up with BookStack for long term notes and Apple Notes for day to day scribbles (but wish they would sort the tables 'offering' - it's horrid).
(Though at first you where still using Lotus Notes
- once had a nightmare getting this up and running)
