So here is the bad news. This isn't possible for those who can't compile their own kernel, and even then it might not be possible. You can set the country code as much as you like, by whatever method but it will simply switch to whatever country code it picks up from the wifi access point and restrict you to the channels available for that country's regulations. I think this is actually in the wifi chip hardware and unless someone knows a trick to fool it into receiving a different country code there doesn't seem a way round it for someone with my skill set.
So I am stuck with 2.4GHz using my Android phone, which is a very disappointing. I suppose 1 question would be why frequency 5805 (channel 161) is not available for country code GB. It is legal for indoor use and my laptop has no problem connecting to it. Maybe the Pi people haven't kept up to date with the regulations?
