Some of those devices have motherboards that are modified or customised firmware or old designs or soldered contacts instead of sockets. If reusing those devices were easy, you could take a Pi 400/500 and replace the keyboard with an 85% or 100% keyboard. But no, they have custom keyboard interfaces.
A bunch of other devices have something more difficult, a custom video interface instead of HDMI. This is the main reason the "convert a smartphone" movement died out.
