So I fail to boot anything but Raspbian on a Pi 5.

You must have done something very special to Raspbian to get it to 64 bit (required for the RPi 5) and to get it to boot. It was replaced with Raspberry Pi OS in 2020 when Raspberry OS was built from Debian rather than any Raspbian stuff.
